Sun Dried Tomato Pesto Chicken Skewers
- 400g chicken breast cut into strips
- 1 can of Cirio Cherry Tomatoes
- 1 jar of Papille Sun Dried Tomato and Roasted Pepper Pesto
- granulated garlic
- wooden skewers
Soak skewers in water overnight.
Marinate the chicken strips in the pesto overnight.
After having marinated overnight, place the chicken on skewers, peircing the strip twice, once at the beginning, then peircing a cherry tomato, then followed by peircing the other end of the strip.
Once skewers are complete, season with salt, pepper and granulated garlic.
Bake or grill until chicken is fully cooked (roughly 6-8 minutes. depending on thickness of strips.
