Haitian Pulled Pork Slider with Pikliz
- a full Pork Shoulder
- 1 tablespoon seasoning salt
- 1/2 tablespoon ground coriander
- 1/2 tablespoon ginger
- 1/2 tablespoon allspice
- 1/2 tablespoon red pepper flakes
- 1/2 tablespoon garlic powder
- 1/2 tablespoon thyme
- 3 tablespoons brown sugar
- 2 tablespoons salt
- 1 tablespoon white pepper
- 1 Scotch Bonnet Pepper
- 2 white onions
- 2 limes
- slider buns
- Papille Pikliz
Trim pork of excess fat and pat dry with a cloth or paper napkin.
In a bowl, mix all spices together with salt and sugar. Generously rub the pork shoulder with the spice mix and let sit for one hour.
Roughly chop the onions and spread them out on a baking tray.
Add pork shoulder to tray and add 1/2 cup of water. Cover with aluminum foil and cook at low heat for 5-6 hours.
In a food processor, blend the juice of 2 limes and the Scotch Bonnet Pepper until mixture is smooth.
Once pork is cooked, completely shred the meat and mix with the lime/pepper mix.
On a slider bun, add a generous amount of pork, then top with pikliz and mayonnaise.
