- Illy Espresso
- 3 Eggs
- 4 tablespoons of sugar
- 250g mascarpone
- Amaretto Liquor
- Amaretti Cookies

Separate the eggs and whisk egg whites until they form stiff peaks.
Beat the egg yolks with sugar using a whisk until mixture is almost white.
Add the mascarpone to the beaten egg yolks continuing to blend until a perfectly creamy mixture is obtained.
Now complete the cream by folding in the egg whites.
Wet the Amaretti cookies in espresso and amaretto, making sure not to get them too wet.
Place a soaked amaretti cookie on the bottom of the glass in which the Tiramisù will be served, spread the mascarpone over the top and repeat the operation to create a second layer.
Leave it to stand in the fridge for at least 30 minutes then serve.
